The Tasting Room

Dine under a cathedral-style ceiling that frames floor-to-ceiling windows or on the wraparound patio, where you'll enjoy spectacular views of the orchard below and Delaware River in the distance. Your eye can see further than the distance Executive Chef Edwyn Ferrari travels to source produce for The Tasting Room, our full-service restaurant where every dish brings out the complex aromas of our cider.

Meals at The Tasting Room are a labor of love. Chef Wyn forages the property and surrounding areas for the garlic grass in your mashed potatoes, the dandelion bud capers in your cured salmon, and the rhubarb for your cider posset. Joshua Hinchman, our cider maker, works the 12-acre organic orchard and ferments cider all year long to bring you the perfect pairings. And we have to thank our outstanding suppliers, Halloran Farm, Snowdance Farm, Heller’s Farm, Norwich Meadows, Hudson Valley Fisheries, Bethlehem Beef, Weissman Farms, Wild Russet Farm, and Goldenrod Mountain Farm, who bring the local flavor.
