Seminary Hill Cider
It all starts on a south-facing slope overlooking the Delaware River, where owners Doug Doetsch and Susan Manning have roots in Callicoon dating back to the 1850s.
Doetsch and Manning worked with the late orchardist Michael Phillips to create the ideal soil conditions for apples using an organic and holistic methodology. They planted the orchard in 2014, and opened the world’s first Passive House certified cidery in 2021.
We grow 60 varieties of cider apples and pears grown in rocky clay. Our fruit produces the complex aromatics, sharp acids, and tactile tannins needed to ferment and blend ciders with depth and nuance.
